For two years I made coffee the way most people do: a heaping scoop, a kettle filled "to about there," and a cup that was great on Tuesday and bitter on Wednesday with no idea why. The fix was not a fancier grinder or a thousand-dollar machine. It was one number — the coffee to water ratio — and a cheap kitchen scale. Once I started weighing instead of guessing, the bad cups mostly stopped. This is the part of brewing nobody sells you, because there is nothing to sell.

What a Coffee Ratio Actually Means

A coffee ratio is written like 1:16, and it reads as a recipe: 1 gram of coffee for every 16 grams of water. That is it. A 1:16 ratio means you weigh out 1 g of ground coffee for each 16 g of water you pour over it. Lower the second number and the brew gets stronger; raise it and the brew gets lighter. So 1:15 is a bolder, more intense cup, and 1:17 is a cleaner, more delicate one. The ratio does not care about your brand of beans, your roast level, or the size of your mug — it scales to anything.

People call the 1:15 to 1:17 band the "golden ratio" because it lands a cup that most palates read as balanced: enough extraction to taste sweet and full, not so much water that it turns thin and sour, not so little that it goes harsh. The Specialty Coffee Association's Golden Cup target sits a touch lighter, around 1:18. None of these are laws. They are starting points you nudge one point at a time until the cup tastes like you want it to.

A Worked Example: Brewing for a Full Pot

Say you are making a larger batch and you have 500 g of water ready (water at room temperature is almost exactly 1 g per mL, so 500 g and 500 mL are the same pour). You want a standard pour-over at 1:16. How much coffee?

Divide the water by the ratio's second number: 500 ÷ 16 = 31.25, so you grind about 31 g of coffee. Want it bolder? Switch to 1:15 and you get 500 ÷ 15 ≈ 33 g. Want it lighter for a fruity, washed bean? Go 1:17 and it drops to about 29 g. Same water, three cups with genuinely different character, and the only thing that changed was a single digit. That is the whole trick: the ratio is the constant, and you tune everything else against it.

The reverse works too. If you already know your dose — your bag calls a serving 15 g but you want a fuller mug at 18 g — multiply by the ratio: 18 × 16 = 288 g of water. Now you fill the kettle just past the 280 mL line instead of eyeballing it.

Scaling by Cups Without the Headache

The annoying thing about a "cup" is that it is not a real unit. A coffee cup is a serving size, not a fixed measure, which is why mugs run anywhere from 180 mL to 350 mL. A US 8 oz mug is about 240 mL, and that is a sane default to scale against.

So if you are brewing for four people at 240 mL each, that is 960 mL of water. At 1:16 you need 960 ÷ 16 = 60 g of coffee. For two guests it is 480 mL and 30 g. The math is simple but it is exactly the kind of thing your brain refuses to do at 6 a.m., which is why locking the cup count and letting the recipe scale itself saves a real argument with yourself before caffeine. One caution: the cup count is computed from the water you pour, not the liquid that lands in the mug. Grounds soak up roughly 2 mL of water per gram, so your finished volume is always a little less than the water you started with. Treat the cup number as a batch-sizing estimate, not a fill line.

Brew Method Changes the Strength Target

The golden 1:16 band is a pour-over and drip number. Other methods want different ratios because they extract differently:

  • Pour-over / V60 / drip: 1:16 to 1:17. Clean, bright, the default.
  • French press: 1:15. Full immersion pulls more out of the grounds, and the heavier body wants a slightly stronger ratio to balance it.
  • AeroPress: around 1:14, often diluted after, because it is built for a concentrated shot.
  • Espresso: 1:2 by weight — 18 g in, 36 g out. Here the ratio is dose to liquid out, not water in.
  • Cold brew concentrate: 1:8. Brew it strong, then cut it roughly 1:1 with water or milk when you serve, so one jar stretches into a week of iced coffee.

Pour-over and French press feel like the same drink to a newcomer, but the press leaves more oils and fines in the cup, so the same 1:16 that sings through a paper filter can read muddy in a press. Nudging the press to 1:15 and the pour-over to 1:16 is a small move that respects what each method actually does. Why Weighing Beats Scooping

Here is the uncomfortable truth about scoops: a level tablespoon of whole beans and a level tablespoon of fine grounds weigh different amounts, and a "scoop" of a light roast weighs less than the same scoop of a dense dark roast because the beans are physically different sizes. Volume lies. A scale does not. When I switched to weighing, my morning routine got shorter, not longer — I stopped re-brewing the cups I had ruined by guessing.

There is one more trap that weighing alone does not fix: the ounce. A weight-ounce of coffee is 28.35 g. A US fluid-ounce of water is 29.57 mL of volume. They are not the same thing, and plugging an ounce of coffee into a recipe as if it were fluid ounces is the single most common error in coffee math — it quietly drifts your whole batch a few percent off, which you will taste on a cold-brew jar. Keep coffee in weight units and water in either weight or volume, and convert each correctly. A good scale and a tool that labels its units explicitly close this gap entirely.

The Repeatable-Cup Mindset

None of this is about chasing one mythical "perfect" ratio. A 1:16 brew run through coarse grounds in 90 seconds tastes thin no matter how exact the ratio, because grind size and contact time move the cup far more than a half-point ratio tweak. The point of locking a ratio is that it removes one variable so you can actually learn the others. Weigh your dose, fix your ratio, then change one thing at a time — grind finer, pour slower, steep longer — and taste what it did. After a week you stop having random good and bad days and start having a cup you can hit on purpose.

That is the entire promise of brewing by ratio. Not a better palate or a bigger budget. Just a number you respect, a scale you trust, and the patience to change one variable at a time.
