A Worked Example: Pulling a Steak Early

Say you want medium-rare, which finishes at 130 to 135°F. You do not pull the steak at 130°F. You pull it at about 125°F. Poultry: 165°F, No Exceptions

Pork and Ground Meat: The Numbers That Surprise People
Pork carries two old myths worth correcting. Whole pork cuts such as chops, loin, and roasts are safe at 145°F (63°C) followed by a 3-minute rest. The USDA lowered this from the old 160°F back in 2011. At 63°C pork is still faintly pink and genuinely juicy, which startles anyone raised on gray, well-done pork. That blush of pink is fine.
