Translating a British cake recipe before the oven is even on
You found a Mary Berry sponge that calls for "1 cup self-raising flour, gas mark 4". You set the unit to UK cup (284.131 mL), pick self-raising flour, and read 142 g. Then the oven panel turns gas 4 into 180 C. Two guesses that could have flattened the cake are gone in fifteen seconds, before you cream a single gram of butter.
Baking bread to gram precision without owning a scale
A sourdough recipe lists 500 g bread flour but your only measure is a US cup. Bread flour runs ~136 g per US cup here, so 500 g is about 3.7 cups. Common pitfalls
Assuming every cup is the same. A US cup is 236.588 mL but a UK cup is 284.131 mL, a 20% gap. Set the cup unit to match the recipe's origin before you trust the grams.
Using one flour density for all flours. Cake flour is ~117 g/cup, bread flour ~136 g/cup. Pick the actual flour, or a 19 g per cup error stacks across a multi-cup recipe.
Treating soy sauce, honey, or oil as water (1.0 g/mL). Light soy is ~1.20 and honey ~1.42, so a volume-to-gram conversion done as water can be off by 20-40%.
